4 Tbsps lemon juice

Preparation steps

1.

Clean the endive, wash and divide into individual leaves, cut out the stalks. Wash apples, halve, core, cut into pieces. Crumble the cheese. Coarsely chop walnuts.

For the dressing, whisk together yogurt, mustard, lemon juice, salt and pepper. Mix endive leaves with apple pieces and walnuts and arrange in a salad bowl. Sprinkle cheese on top and serve dressing on the side. Serve with whole wheat rolls, if desired.
