80 grams Walnut
2 Tbsps sugar
2 Endive
2 Apple
2 Pear
150 grams Gorgonzola
5 Tbsps apple cider vinegar
4 Tbsps grapeseed oil
salt
freshly ground peppers

Preparation steps

1.

Coarsely chop the walnuts. Melt the sugar, caramelize until golden brown, then toss the walnuts in the caramel. Spread on a baking sheet and let cool.

Rinse the endive, remove the core, and separate into individual leaves. Rinse and halve the apples and pears. Remove the cores and thinly slice.

Place the endive, apples, and pears onto plates. Crumble the cheese and caramelized nuts over the nut. Sprinkle the remaining nuts over the top. Mix the oil and vinegar, then season with saltand drizzle over the salad. Garnish the salad with freshly cracked black pepper, and serve.
