1 ⅛ cups Rice
4 Tbsps vegetable oil
2 onions (sliced)
4 Chicken breasts (cut into chunks)
fresh ginger (peeled and grated)
2 garlic cloves (chopped)
2 red chili peppers (deseeded and chopped)
2 cups Shredded coconut
3 Tbsps light soy sauce
2 Tbsps sesame oil
fresh cilantro (chopped)

Preparation steps

1.
Cook the rice according to the packet instructions.
2.
Heat the vegetable oil in a wok or large pan and gently fry the onions until soft but not brown. Add the chicken and cook until is is just cooked through then turn up the heat and add the ginger, garlic and chillis.
3.
Cook for 3 minutes, stirring all the time, then add the soy sauce, sesame oil and coriander. Stir thoroughly then serve immediately on a bed of the cooked rice
