- 300 grams green Asparagus
- salt
- 2 scallions
- 4 Tomatoes
- 150 grams Couscous
- 4 Tbsps finely chopped parsley
- 4 Tbsps olive oil
- 6 Tbsps freshly pressed Orange juice
- 6 Tbsps freshly pressed lemon juice
- 1 garlic clove
- salt
- freshly ground peppers

Preparation steps
1.
Trim bottom third of asparagus, cut stalks diagonally into pieces and blanch for 3-4 minutes in boiling salted water. Drain. Rinse and dry scallions,cut into rings. Blanch tomatoes in boiling water, rinse, peel, quarter, core and dice finely. Cook couscous according to package instructions. Combine couscous with asparagus, scallions and chopped parsley. Combine diced tomatoes with olive oil, orange and lemon juice. Peel and squeeze garlic through a garlic press.Add to tomatoes. Season with salt and pepper.

Combine all ingredients and let rest for 15 minutes.

Season salad with salt and pepper again, arrange on plates and serve.
