400 milliliters boiling Salt water
For the vegetables
4 Tomatoes
½ bunch scallions
3 garlic cloves
1 tsp ground cilantro
4 Tbsps olive oil
3 Tbsps White vinegar
salt
freshly ground peppers
1 bunch parsley (finely chopped)

Preparation steps

1.

Pour the boiling salted water over the couscous and let soak for 5 minutes. Fluff with a fork and keep warm.

2.

Rinse and trim the tomatoes. Halve, remove the seeds, and finely chop.

3.

Rinse and trim the scallions, then thinly slice. Peel and finely chop the garlic.

4.

Mix the vegetables, coriander, oil, vinegar, and 1/2 cup of hot water. Season to taste with salt and pepper. Add the couscous and parsley, and thoroughly combine.
