400 milliliters Vegetable broth
200 grams Couscous
2 large yellow onion
1 kilogram Tomatoes
2 tsps Canola oil
1 tsp sugar
400 grams nonfat cream cheese
200 milliliters Tomato juice
2 tsps dried thyme
salt
freshly ground peppers
ground paprika

Preparation steps

1.

Bring the broth to a boil. Mix the couscous into the broth, stirring constantly. Peel and finely dice the onions. Rinse and halve the tomatoes. Remove the cores and dice into large pieces.

Heat the oil in a pan, and sauté the onions. Add the diced tomatoes and sugar to the onion and cook for another 2 minutes over low heat. Mix the cream cheese with the tomato juice and the thyme. Add to the pan with the onions, bring to a boil, and cook for 3 minutes. Season to taste with salt, pepper, and paprika. Add the couscous to the pan, mix well, and serve.
