1 ⅔ cups vegetable stock
1 ½ cups instant Couscous
1 Eggplant (diced)
2 Tomatoes (sliced)
1 red pepper (diced)
1 shallot (diced)
2 cloves garlic cloves (diced)
2 Tbsps parsley (chopped)
2 Tbsps Red wine vinegar
1 Tbsp lemon juice
7 Tbsps olive oil

Preparation steps

1.
Pour the hot stock over the couscous and leave to steep for around 5 minutes, then fluff up with a fork.
2.
Fry the vegetables in 2 tbsp hot oil and stir into the couscous along with the parsley.
3.
To make the vinaigrette, mix together the vinegar, lemon juice and oil. Season with salt, ground black pepper and a pinch of sugar.
4.
Arrange the couscous on plate and serve with the vinaigrette.
