- 1 Pineapple
- ¾ cup Coconut milk (1.9% fat)
- 1 cup Soy milk (1.2% fat; ice cold)
- 2 tsps chopped Shelled pistachio
- In addition: Ice cubes

Preparation steps
Cut pineapple into quarters. Cut two narrow strips from 1 quarter and set aside. Cut peel and core from remaining pineapple and dice the flesh.
Put diced pineapple, coconut milk and soy milk into a tall vessel and puree with an immersion blender until smooth. Fill 2 glasses with ice cubes and pour in smoothie mixture. Garnish with pineapple strips and pistachios. Serve immediately.
