300 grams sugar
1 tsp lemon juice
1 Tbsp cinnamon
½ organic lemon (zested)
¼ tsp Ground clove
¼ tsp allspice

Preparation steps

1.

Beat egg whites until very stiff and gradually add the sugar. Stir in the lemon juice. Place 4 tablespoons of the glaze in a bowl, cover with plastic wrap, and chill in the refrigerator.

Carefully fold almonds, spices and lemon zest into the remaining egg mixture. Sprinkle the work surface and the dough with sugar.

Roll out the dough to approximately 4 mm approximately 1/8 inch) thick. Dip a star cookie cutter in sugar and cut out cookies, while the cutter is repeatedly dipped in sugar. Place stars on a baking sheet lined with parchment paper. Brush cookies with the glaze and bake for about 12 minutes in a preheated oven at 180°C (approximately 350°F). Cool on a wire rack.
