6 unwaxed Navel Orange
1 cup sugar
1 cup water
1 stick cinnamon (broken)
To serve

Preparation steps

1.
Cut the skin and pith from the oranges and divide the flesh into segments. Divide between four serving glasses.
2.
Heat the sugar, half the water and the cinnamon stick in a pan and stir over a medium heat until the sugar dissolves.
3.
Bring to a simmer without stirring, then simmer gently until the sugar turns a golden caramel. Remove from the heat and remove the cinnamon stick.
4.
Carefully add the remaining water. Stir to remove any lumps of caramel.
5.
Pour 3/4 of the caramel over the orange slices. Leave to cool, then chill.
6.
Serve with whipped cream sprinkled lightly with cinnamon and decorate with mint leaves.
