1 Kitchen scale, 1 Small bowl, 1 große Mixing bowl, 1 Tablespoon, 1 Hand mixer, 1 Whisk, 1 Fine-mesh sieve, 2 Baking sheets oder 1 Springform (24 cm Ø), 1 Parchment paper, 1 Dough scraper, 1 Offset spatula, 1 Teaspoon, 1 evtl. Brush, 1 evtl. spitzes Knife, 1 evtl. Wire rack
Preparation steps

Line two baking sheets with parchment paper.

Beat egg whites with 1 teaspoon orange juice until stiff peaks form. Gradually add confectioners' sugar, then vanilla, orange zest, and juice from half an orange. Beat until mixture is firm and shiny. Remove about 6 tablespoons to use for glaze; chill in the refrigerator until ready to use.

Fold the ground almonds and cinnamon into the egg white mixture; mixing to incorporate.

Sprinkle your work surface with confectioners' sugar and ground almonds. Roll out dough to a 3/4-inch thickness in the shape of a rectangle. Cut dough into bite-size strips and place on prepared baking sheets 2-inches apart. Chill for about 10 minutes in the refrigerator.

Meanwhile, preheat oven to 275º F.

Brush chilled strips with remaining glaze (if glaze is too thick, add a drop or two of orange juice). Sprinkle with cinnamon and bake for 20 to 30 minutes.
