- 4 Chicken breasts
- salt

- 1 Tbsp vegetable oil
- 1 tsp butter
- 1 lemon
- lemon sauce
- juice of lemons
- 2 tsps grated Lemon peel
- 2 egg yolks
- 125 grams butter (melted)
- 150 grams Sour cream
- salt
- freshly ground peppers
- scallions (for garnish)
- lemons (for garnish)
Preparation steps

For the lemon sauce, whisk the lemon juice with the egg yolks in a water bath with the whisk hand mixer until frothy. Gradually add a littlf of the melted butter and whisk until the sauce is creamy. Season with salt and pepper. Mix the sauce with sour cream and keep warm.

Season the chicken with salt and pepper and saute in butter and oil while turning, about 8 minutes.

Serve the sauce with the chicken and garnish with chopped chives and lemon slices.
