Chicken with Lemon

- 1 chicken (1.2 kg)
- 2 whole lemons
- 3 garlic cloves
- 2 Tbsps olive oil
- 1 Tbsp butter
- 1 bunch scallions
- ½ tsp dried oregano
- ⅛ l white wine
- ⅛ l Chicken broth (from a jar)
- salt
- peppers
- fresh oregano (for garnish)
Preparation steps
Rinse the chicken, pat dry and cut into eight serving pieces. Grate the zest of the lemon. Peel the garlic cloves and press through a garlic press into a bowl. Mix with the lemon zest and 1 tablespoon olive oil. Mix with the oregano, salt and pepper and rub onto the chicken pieces. Heat the remaining oil and butter in a roasting pan. Preheat the oven to 250°C (approximately 475°F), place the chicken pieces with the skin side down in the roasting pan and bake in the oven 15 minutes.
Trim, rinse and cut the scallions diagonally into 3 cm (approximately 1 1/4 inch) long pieces. Cut one lemon into thin slices and squeeze the juice from the other. Turn the chicken pieces in the pan , sprinkle with lemon juice and scallions and add the lemon slices. Pour in the wine and broth, reduce the oven temperature to 200°C (approximately 375°F) and cook uncovered for another 30 minutes, turning several times. Serve garnished with oregano leaves.
