Preparation steps
1.
Rinse the lemons and limes in hot water, pat dry, zest and squeeze the juice. Pour the juice through a sieve. Beat the butter, sugar, zests and juice over a hot water bath until smooth.
2.
Beat the eggs and gradually stir into the mixture. Continue beating over the hot water bath until creamy.
3.
Pour into glasses, cover and chill. Serve cold.
