Ingredients

2 tablespoonsolive oil
2Chicken breasts skinned and diced
1red Bell pepper deseeded and sliced
1 ⅓ cupscanned button Mushroom sliced
⅔ cupsfrozen peas thawed
1onions sliced
1 cupgrated Cheese
1 pinchCurry powder
2Ciabatta split horizontally

Directions

1 Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
2 Heat the oil in a pan and quickly fry the chicken until lightly browned.
3 Stir in the bell pepper, mushrooms, peas, onion, cheese and curry powder, season with salt and pepper and pile the mixture onto the sliced ciabattas.
4 Bake in the oven for 10 -15 minutes.
