Chicken breasts (skinned and diced)
red Bell pepper (deseeded and sliced)
- 1.333 cups
canned button Mushroom (sliced)
- ⅔ cup
frozen peas (thawed)
- 1 cup
- 1 pinch
Ciabatta (split horizontally)
Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
Heat the oil in a pan and quickly fry the chicken until lightly browned.
Stir in the bell pepper, mushrooms, peas, onion, cheese and curry powder, season with salt and pepper and pile the mixture onto the sliced ciabattas.
Bake in the oven for 10 -15 minutes.
