- 1 tsp sugar
- 4 ½ cups Bread flour
- 1 Tbsp salt
- ¼ cup olive oil
- 3 Tbsps white breadcrumbs

Preparation steps
1.
Mix half the yeast with approx. 250 ml lukewarm water and the sugar. Add the flour and mix thoroughly. Cover and leave in a warm place overnight.

Next day, dissolve the remaining yeast in approx. 70 ml lukewarm water and add to the dough with the salt, oil and breadcrumbs. Knead vigorously for a few minutes, then cover and leave to rise for approx. 2 hours. The dough may be very sticky and contain a lot of air.

Halve the dough on a floured surface and shape each half into a loaf. Leave the loaves to rise for another 1-2 hours.
4.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7. Heat a baking tray covered with baking parchment or a pizza stone in the oven.
5.
Place the loaves on the baking tray/pizza stone and place in the oven with a heatproof bowl of water. Bake for approx. 30 minutes.
6.
Ciabatta is best served lukewarm with sea salt, olive oil and olives.
