1 tsp sugar
4 ½ cups all-purpose flour (Type 550)
1 Tbsp salt
¼ cup olive oil
3 Tbsps white breadcrumbs

Preparation steps

1.
Mix half the yeast with approx. 250 ml lukewarm water and the sugar. Add the flour and mix well. Cover and leave in a warm place overnight to start working.

The next day, dissolve the rest of the yeast in approx. 70 ml lukewarm water and add to the dough together with the salt, oil and breadcrumbs. Knead vigorously for a few minutes then cover and leave for approx. 2 hours to rise. The dough should be very sticky and aerated.
3.
Divide the dough into two pieces and shape into ciabatta loaves on a floured surface. Leave for a further 1-2 hours to rise.
4.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7. Put a pizza stone or baking tray in the oven to heat.
5.
Put the loaves on the stone or tray (add a sheet of grease-proof paper if using a tray) and place an oven-proof dish of water in the bottom of the oven. Bake for around 30 minutes. Best served fresh with some natural olive oil.
