1 onion (peeled and finely chopped)
2 carrots (peeled and finely chopped)
2 sticks Celery (finely chopped)
12 new potatoes (halved)
2 Chicken breasts (, skinned and chopped)
1 sprig rosemary (or thyme)
4 cups chicken stock

Preparation steps

1.
Heat the oil or butter in a large pan and sweat the onion, carrot and celery without colouring until softened - about 10 minutes.
2.
Add the potatoes and chicken, stir well and cook for a few minutes, then add the herbs and stock and simmer for 20 minutes or until the potatoes are tender.
3.
Season well, sprinkle with torn basil and serve hot.
