Smooth Chicken Vegetable Soup Remove the chicken with a slotted spoon, whizz the soup in a blender, return to the heat and reheat gently with the chicken
Heat the oil or butter in a large pan and sweat the onion, carrot and celery without colouring until softened - about 10 minutes.
Add the potatoes and chicken, stir well and cook for a few minutes, then add the herbs and stock and simmer for 20 minutes or until the potatoes are tender.
Season well, sprinkle with torn basil and serve hot.
