5 White rolls
500 grams mixed Ground meat
1 tsp Mustard
salt
freshly ground peppers
1 egg
30 grams clarified butter
4 slices Cheshire cheese
1 ripe Avocado
1 Tbsp lemon juice
2 cooked, peeled Beets
Cress (for garnish)

Preparation steps

1.

Heat the broiler. Cut the tops off 4 rolls. Soak the rest of the rolls in lukewarm water. Squeeze the bread well, In a bowl, mix the ground meat with the mustard, egg and well-squeezed bread and season with salt and pepper. Shape into 4 patties.

Heat the butter in an ovenproof skillet and saute the patties until browned on both sides. Top each with one slice of cheese and broil until melted. Cut the avocado in half, remove the pit, scoop out the pulp  and cut into wedges. Immediately drizzle with lemon juice.

Heat a grill or a grill pan. Halve the beet and julienne. Place the bottom bun halves on the grill or grill pan and cook until lightly browned and grill marks appear. Top each with a cheese burger and a few avocado wedges and garnish with the beet strips and cress. Serve immediately.
