4 Fish sticks
1 pc Cucumber (about 10 cm or 4 inches))
¼ ripe Avocado
1 tsp lemon juice
200 grams prepared Sushi rice
1 tsp Mayonnaise
1 tsp Wasabi
2 roasted Nori seaweed
4 Tbsps Trout roe (or red lumpfish roe)

Preparation steps

1.

Cut the surimi in half lengthwise. Cut the cucumber in half lengthwise, scrape out the seeds and cut into 0.5 cm (approximately 1/8 inch) thick strips. Cut the avocado in half, remove the pit, cut lengthwise into strips and sprinkle with lemon juice immediately.

Line the sushi rolling mat with plastic wrap and place a nori sheet with the smooth side down. Spread half of the sushi rice on it, slightly press and turn the nori over carefully, so that the rice is directly on the plastic.

On the bottom third of the square, spread half of the mayonnaise, wasabi paste, surimi, cucumber and avocado strips and roll using the rolling mat. Form a second roll from the rest of the ingredients.

4.

Roll the sushi rolls in trout caviar and then cut each into 6 equal pieces, then serve.
