28 ozs Calamari (ready to cook)
2 onions (finely diced)
1 garlic clove (finely chopped)
2 Tbsps vegetable oil
9 ozs diced Tomatoes (canned)
2 Tbsps Tomato paste
½ tsp Cumin
2 Tbsps parsley (chopped)
salt
freshly ground peppers

Preparation steps

Heat oil in a pan and saute onions and garlic until soft. Add tomato paste and saute briefly. Add tomatoes and 2/3 cup of water. Season with cumin powder, salt and pepper. Simmer, stirring occasionally, for about 15 minutes.

Add parsley and pour sauce into a baking dish. Add calamari and cover with sauce. Bake in preheated oven at 180°C (approximately 350°F) for about 20 minutes. Remove from oven and serve.
