Deep Fried Calamari
Cut squid into rings. Rinse chile peppers, cut in half lengthwise, remove seeds and ribs and finely chop. Separate egg. Beat egg white until semi-rigid.
Mix flour in a bowl with chile peppers, egg yolk, egg white, wine, salt and 1 tablespoon oil. Dip squid in the batter and fry until golden brown in a pan of hot oil. Season with lemon juice and salt and serve with chilli sauce.
