1 kilogram Beans (Broad beans)
2 organic lemons
2 Red onions
1 Tbsp salt
1 bunch fresh oregano
1 l olive oil

Preparation steps

1.

Rinse and trim beans. With a vegetable peeler, remove lemon zest in long strips. Peel, halve and thinly slice onions.

2.

Rinse jars. Fill bottoms of jars with beans, then top with lemon zest, onion and oregano sprigs. Sprinkle with salt. Repeat layers until all ingredients are used up.

3.

Pour oil over beans to cover. Seal jars and let marinate in a cool, dark place for about a week.
