9 ozs Beets
4 ½ ozs Oat Milk
2 ¾ ozs Cashews
1 oz lemon juice
1 oz white or yellow Miso paste
peppers
½ bunch parsley
3 Tbsps walnut kernels

Preparation steps

1.

Cook pasta in salted water according to package directions until al dente.

2.

Place beet, oat drink, cashews, lemon juice, miso paste, pepper and salt in a blender and blend on high speed for about 60 seconds until a creamy sauce is formed. Season to taste with salt and pepper.

3.

Wash parsley, shake dry and chop finely. Coarsely chop walnuts.

4.

Pour the sauce directly over the drained pasta and mix well. Serve the Beet Pasta sprinkled with walnut kernels and parsley.
