Ingredients

For the dough
200 grams Wheat starch
boiling water
For the filling
125 grams chopped shrimp
1 generous pinch freshly grated ginger
1 Tbsp sesame oil
fresh cracked peppers
1 Tbsp finely chopped onions (or leeks)
salt
For the sauce
6 Tbsps soy sauce
4 Tbsps Wine vinegar

Preparation steps

For the dough, mix wheat starch and water (adding small amounts of starch at a time) to produce a supple, smooth dough. Roll out thinly, cut out several 8-10 cm (approximately 3 inch) wide circles. For the filling, mix shrimp, ginger, sesame oil, pepper, onion (or leek) and salt together. Place the filling in the center of the circles.

Fold in half, crimping the seam to seal well and forming a decorative edge. Steam in bamboo baskets for 10 minutes. For the sauce, mix all ingredients and serve in small bowls alongside the wontons.
