1 tsp Rice vinegar
1 tsp Peanut oil
For filling
4 scallions
200 grams chopped shrimp
½ tsp freshly grated ginger
1 tsp sesame oil
salt
1 pinch sugar
Corn oil (for the steamer basket)

Preparation steps

1.

Combine flour, vinegar, oil and 150 ml (approximately 1/2 cup) of water. Stir together into a supple, smooth dough. Roll out thinly and cut circles about 8 to 10 cm (approximately 3 1/4 inches) wide.

Rinse the scallions, trim the ends, cut into circles, and mix with the shrimp, ginger, sesame oil, sugar, and salt. Spoon the filling into the center of the dough circles. Fold the circle in half over the filling. Seal the edges and fold decoratively in a zig-zag design. 

3.

Grease a bamboo steamer basket with corn oil and place over boiling water. Steam the dumplings for about 8 minutes. Serve with hot sauce, if desired.
