2 Tbsps sugar (about 40 grams)
14 ozs Yogurt (3.5% fat)
liquid Sweetener
1 sheet white gelatin
5 ozs fresh Raspberries

1 Cutting board, 1 Small knife, 1 Bowl, 1 Tablespoon, 1 Wooden spoon, 1 Immersion blender, 1 Small bowl, 1 Small pot, 1 Ice cream machine, 1 Large knife

Preparation steps

Rinse nectarines, halve and pit. Thinly slice some for garnish and chop the rest.

In a bowl, mix nectarines with sugar and let stand for 30 minutes at room temperature.

Combine nectarines and accumulated juices with yogurt in a tall vessel and puree with an immersion blender. Add sweetener to taste.

Soak gelatin in a bowl of cold water.

Heat 2 tablespoons of the yogurt mixture in a small pot. Add softened gelatin and stir to dissolve, then add the remaining yogurt mixture and stir to combine.

Freeze in an ice cream machine. Scoop into ovals with a tablespoon and serve with the raspberries and reserved nectarine slices.
