In the original, cream yoghurt and sugar are usually put into the ice cream machine. This version also tastes great with the much lower-fat whole milk yoghurt and fine sweetness without sugar and also provides plenty of protein and calcium.
Would you like a little more? In the USA, this cold delicacy is often enjoyed with rather rich toppings such as chopped peanuts or chocolate sprinkles. At least as delicious, but low in fat and rich in vitamins, is the equally popular variant with chopped fresh fruit.

- 1 Vanilla bean
- 1 ½ lbs Yogurt (3.5% fat)
- 2 Tbsps sugar (40 grams)
- ½ Lime
- 1 sheet white gelatin
- liquid Sweetener (to taste)

Preparation steps
Cut vanilla bean lengthwise and scrape out the seeds.
Place vanilla seeds and yogurt in a bowl. Add sugar and stir until dissolved.
Rinse lime in hot water, wipe dry and squeeze 1 tablespoon juice. If desired, cut some thin strips for garnish.
Soak the gelatin in cold water.
Heat lime juice in a small pot, add gelatin and stir to dissolve.
Mix gelatin mixture with 3 tablespoons of yogurt, then stir mixture into remaining yogurt and season to taste with sweetener. Freeze in the ice cream machine and place in freezer until ready to serve. Garnish to taste with a little lime zest.
