Raspberry-Yogurt Ice Cream

Like all berries, raspberries contain plenty of anthocyanins. These natural plant dyes have a strong antioxidant effect, protecting the body against harmful free radicals that damage our cells. The power substance also has an anti-inflammatory effect and protects our blood vessels.
Roasted coconut chips, chopped walnuts, or pistachios are all great toppings for this ice cream!

- 9 ozs Raspberries
- 2 Tbsps honey
- 2 Tbsps lemon juice
- 10 ozs Yogurt (0.1% fat)
- 5 ozs Whipped cream
- white Chocolate shaving (for garnish)
Preparation steps
Brush the raspberries, then puree in a blender with the honey and lemon juice. Stir in the yogurt. Beat the cream until stiff, then fold into the yogurt mixture. Process in an ice cream machine. Alternately, you can place the mixture into a shallow metal pan, and place in the freezer for 4 hours. Stir the mixture thoroughly every 30 minutes.
Scoop the ice cream into balls with an ice cream scoop and place into bowls. Garnish with the grated white chocolate, and serve.
