4 Red onions
3 cups Mushrooms (e. g. button mushrooms, portobello, stems removed)
¼ cup olive oil
2 Tbsps chopped parsley
salt
freshly ground peppers
1 Tbsp lemon juice
1.333 cups Halloumi cheese (diced)

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a large baking tray with non-stick baking paper.
2.
Peel the onions and cut into quarters, leaving the root intact. Place on the baking tray.
3.
Place the mushroom caps on the baking tray, dark side up.
4.
Mix together the olive oil, with the parsley, salt and pepper and lemon juice.
5.
Brush the onions with half the oil mixture. Mix the halloumi with the remaining oil mixture and spoon on top of the mushrooms.
6.
Bake for 15-20 minutes until the cheese is browned and the onions are tender.
