- 4 cups cooked potatoes (mashed)
- ¼ cup unsalted butter
- 1 handful oregano (chopped)
- 1 shallot (finely chopped)
- 2 cloves garlic cloves (minced)
- 4 Portobello Mushroom (peeled)
- ¼ cup olive oil
- 2 large vine Tomatoes (cored, seeded, and diced)
- 1 Chervil
- salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the oven to 200°C(180° fan)|400F|gas 6.
2.
Mix the mashed potato with the butter, oregano, shallot, garlic, and seasoning.
3.
Remove the stalks from the mushrooms and finely chop. Mash into the potato.
4.
Fill the mushroom caps with the potato mixture and arrange in a baking dish. Drizzle with olive oil and season with salt and pepper.
5.
Bake for 20 minutes until the mushrooms are tender to the point of a knife.
6.
Remove from the oven and top with the tomatoes and a garnish of chervil before serving.
