50 sweet Cherries (with stems)
1 cup Cognac
9 ozs good quality white chocolate (roughly chopped)
2 cups Shredded coconut

Preparation steps

1.
Place the cherries in a bowl and pour over the cognac. Cover and leave to steep for at least 2 days in the refrigerator. The cherries should be covered by the cognac at all times (add more cognac if necessary).
2.
Drain the cherries and pat dry.
3.
Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water.
4.
Hold the cherries by their stalks and dip into the chocolate, allowing any excess to drip off.
5.
Place on a wire rack or non-stick baking paper to set slightly, then roll in the shredded coconut and leave to set completely.
