1 kilogram fresh Vegetables (such as cucumbers, spring onions, peppers, carrots, fennel, etc.)
1 whole Orange (or lemon)
1 egg yolk
salt
1 Dijon Mustard
l sunflower oil

Preparation steps

1.

Rinse the orange (or lemon), zest and juice. Peel and mince the garlic. Whisk the egg yolk with the salt, Dijon mustard and 1 tablespoon of orange juice. Slowly drizzle the sunflower oil in while whisking vigorously. Continue whisking until the sauce is smooth and creamy. Season with the minced garlic, 1/2 teaspoon of orange zest, a bit of orange juice, salt and pepper.

Rinse and cut the fresh vegetables, arrange on a serving platter and serve with the citrus mayonnaise.
