Fries with Homemade Mayonnaise
Ingredients
- For the mayonnaise
- 1 egg yolk (very fresh)
- salt
- 1 pinch sugar
- 1 tsp Mustard
- 125 milliliters sunflower oil
- 1 Tbsp lemon juice
- For the fries
- 1 kilogram large, waxy potatoes
- 1 ½ liters Frying oil
- salt
- For serving
- 4
- 1 Tbsp clarified butter
- Ketchup (as desired)
- Curry powder
Preparation steps
For the mayonnaise: Before beginning, make sure all ingredients are the same temperature. Beat egg yolk until smooth with a little salt, mustard and sugar. Slowly beat in oil, drop by drop. Beat with a whisk until mixture is thick and creamy. Alternate adding remaining oil and lemon juice. Season with salt and chill until ready to serve.
For the fries: Prepare the fryer and heat to 170°C (approximately 340°F) or heat fat in a sufficiently large saucepan (the oil is hot enough when bubbles appear when a wooden spoon handle is submerged. Peel potatoes, cut into sticks and dry well.
Fry potato strips in portions and cook until golden brown, about 4-5 minutes. Drain and season with salt.
Slice currywurst with a sharp knife. Heat clarified butter in a pan and fry sausages over medium heat until golden brown, about 4 minutes. Cut into pieces and sprinkle with curry.
Serve fries with sausage, ketchup and mayonnaise.
