These fruit popsicles give you a lot of options to pick and choose your favorite fruits. If you want more vitamin C, you can use citrus fruits. If you want more potassium, you can use bananas. If you want more fiber, you can use plums or cherries. The opportunities are endless!
You can also combine fruits and make things like strawberry-banana popsicles, mango-pineapple popsicles, or kiwi-lime popsicles.

- 14 ozs Fruit (as desired - rinsed, if necessary, peeled, pitted and chopped)
- 3 ½ ozs sugar
- 1 Lime (juiced and zested)
- 1 fresh egg white
- Plastic Containers (reusable, with stem for popsicle stick)
- Wooden stick
Preparation steps
Purée the fruit in a blender and press through a sieve.
Boil the sugar with 4 tablespoons of water until syrupy and then allow to cool. Mix with the puréed fruit, the lime juice and the zest.
Beat the egg whites until stiff and fold into the fruit.
Pour the mixture into a flat metal tray and place in the freezer, with occasional stirring, so that no large crystals form.
When the mixture is half frozen, transfer to popsicle molds. Insert a wooden stick as a handle and freeze for 2-3 hours.
The remaining mixture can be transferred to ice-cube trays. Freeze for 2-3 hours.
