These popsicles are not only delicious, but they are also particularly low in calories and fat!
While egg whites add a delicious texture to these popsicles, you can easily make these popsicles vegan by replacing the egg whites with a splash of fruit juice.

- Ingredients
- 1 ⅓ cups mixed Fruit (kiwi, mango, apple, strawberries)
- 1 ⅓ cups mixed Berry (blueberry, raspberry, balckberry)
- ½ cup sugar
- juiced and zested Limes
- 1 egg white
- popsicle mold
- Wooden stick
- tall, narrow yogurt pot (or similar)
Preparation steps
1.
Wash the fruit, peel if necessary and chop. Keep back about 1/3 of the fruit and blend the rest to a puree in a liquidiser.
2.
Boil the sugar with 4 tbsp water to make a syrup, then cool and mix with the fruit, the fruit puree, lime juice and grated lime rind.
3.
Whisk the egg white stiffly and fold evenly into the fruit mixture. Transfer to a shallow metal dish and put into the freezer. Stir from time to time.
4.
Line the molds or yogurt pots with a few slices of kiwi fruit and put into the freezer. Once the fruit mixture is half-frozen, fill the molds, insert the wooden sticks, and freeze for 2-3 hours.
