Preparation steps

Peel the potatoes and cut them into thin slices. Peel the onion and chop finely.

Sauté the potatoes in 2-3 tablespoons of oil in a nonstick pan for about 10 minutes. Agitate the pan from time to time so they don't stick. Add the onions and sauté for another 5 minutes.

Whisk the eggs and season with salt, pepper and cilantro. Mix in the crumbled feta and pour over the potatoes. Allow to thicken slowly for about 5 minutes and then flip the tortilla over using a dinner plate. Cook in the remaining oil for another 5-10 minutes until golden brown.

Remove from the pan and serve cut into pieces.
