800 grams cooked potatoes
salt
500 grams Leeks (rinsed and trimmed)
1 green Bell pepper
2 red Bell pepper
2 Tbsps vegetable oil
freshly ground peppers
150 spicy, grated Gouda
100 grams grated Parmesan
2 red chili peppers
14 eggs

Preparation steps

1.

Halve the chiles lengthwise, remove the seeds, rinse and cut into thin strips.

Halve the leek lengthwise and cut into narrow strips. Slice the potatoes.

Rinse the peppers and cut into small cubes. Grease a baking sheet (with a high edge) with oil. Spread the leek and diced peppers on the baking tray. Season with salt and pepper. Bake for about 20 minutes at 200°C (approximately 400°F), turning once.

4.

Beat the eggs and season with salt and pepper. Remove the baking sheet from the oven and spread the chile peppers and potatoes on top. Sprinkle with the cheeses and pour the egg mixture on top. Bake for 25-30 minutes, until golden brown. Remove from the oven and let cool. Cut into small squares and serve.
