2 Bell pepper
2 onions
2 garlic cloves
1 Tbsp parsley
1 Tbsp Basil
1 kilogram Tomatoes
2 Tbsps olive oil
4 allspice
2 cloves
1 bay leaf

½ tsp sugar
1 Tbsp balsamic vinegar

Preparation steps

Rinse and halve the peppers. Trim the peppers, remove the seeds, and finely dice. Peel and finely dice the onion and garlic. Rinse and finely dice the tomatoes.

Heat the oil in a wide saucepan, then sweat the onions until soft. Add the peppers and garlic, and sauté for 4 minutes. Stir in the tomatoes, parsley, basil, allspice, cloves, and the bay leaf. Season to taste with salt and pepper, then bring to a boil. Reduce the heat to low and cover the pot. Simmer the tomato mixture for 1 hour.

Pass the tomato mixture through a fine strainer. Return to the pot and boil another 30 minutes. Season to taste with salt, pepper, sugar, and vinegar. Fill the prepared jars to the brim with the sauce, and seal tightly. Turn upside down to cool slightly, then turn right side up and cool completely. The sauce will keep for 3-4 weeks in the refrigerator.
