Toast with Peanut Butter, Cream Cheese, Cranberries and Seeds
This toast is a great snack or the perfect way to start your day. It is well rounded, containing carbs, fats, nutrients and proteins from the bread, nuts, and dried fruits. If you are low on iron, doctors recommend dried fruits to increase your iron, so this recipe is perfect for those who are anemic!
You can also leave out the cream cheese or use greek yogurt for a lower calorie option. The peanut butter can be substituted with another type of nut butter if you have allergies to peanuts.
In a small bowl, mix peanut butter with cream cheese until creamy.
Lightly toast bread and spread bread with peanut butter mixture. Sprinkle with pumpkin seeds and cranberries.
Wrap in parchment paper and serve as a snack.
