1 sprig Lemongrass
2 centimeters ginger
150 grams Arborio rice
400 milliliters Coconut milk
50 grams Palm sugar
2 Star anise
100 grams Marzipan
green Food coloring
powdered sugar
For the dip
30 grams Sesame seeds
100 grams honey
4 Tbsps Lime juice

Preparation steps

1.

For the sushi: Rinse lemongrass. Peel ginger peel and slice. Combine lemongrass, ginger, rice, coconut milk, palm sugar and star anise and simmer for 15 minutes. Remove from heat and let sit, covered, approximately 15 minutes, stirring occasionally. Remove lemongrass, ginger and  star anise. Allow rice to cool.

Knead marzipan with food coloring on a surface dusted with powdered sugar. Put between two layers of plastic wrap and roll 1 to 1.5 mm (approximately 1/50 inch) thick. Remove plastic wrap and cut marzipan into 1 cm (approximately 1/3 inch) wide strips.

For the dip,: Roast sesame seeds in a dry frying pan. In a small bowl, combine seeds with honey and lime juice.

Divide rice into 24 portions, forming each portion with wet hands. Peel and thinly slice fruit. Top each mound of rice with a slice of fruit. Gently take a piece of marzipan and wrap it around the mound of rice and fruit. 

5.

Plate sushi on wooden boards or Japanese dishes. Serve with dip.
