Sweet Fruit Sushi
Ingredients
- For the coconut rice
- 200 milliliters milk
- 250 milliliters Coconut milk
- 1 pinch salt
- 1 tsp butter
- 1 generous pinch Lime zest
- 40 grams sugar
- 125 grams Arborio rice
- fruit
- 2 ripe Kiwi
- 1 ripe Mango
- 4 big, ripe Strawberries
- 1 Dragon fruit
- For the chocolate sauce
- 150 grams Dark chocolate (65% cocoa)
- 100 milliliters Whipped cream
Preparation steps
Pour milk and coconut milk into a saucepan. Add butter, lime zest, sugar and salt. Bring the milk to a boil, stirring occasionally. Add rice to the milk and bring back to a boil, stirring briefly. Lower the heat, cover the pot with a lid and let cook until rice is cooked, 30-35 minutes. Add milk as required. Allow the rice pudding to cool slightly. Using a damp spoon, form small, bite-sized balls and place on a plate. Mound balls with a spoon and smooth the surfaces, making small oval cakes. Let cool.
Peel the kiwis and cut into thin slices. Rinse the strawberries and cut into thin slices. Peel the mango and cut into long, thin slices. Remove the pulp from the pitahaya and cut into thin slices.
Cover the rice cakes with various fruits. Refrigerate until ready to serve.
Chop the dark chocolate and melt over a hot (not boiling) water bath. Stir in the cream for 1 minute to warm.
Serve the sushi cold with cooled chocolate sauce. Best to eat with chopsticks.
