- 750 grams small onions
- 400 milliliters balsamic vinegar
- 250 grams sugar
- 2 tsps Sea salt
- 2 tsps black peppercorns
- ½ tsp allspice
- 2 small red chili peppers
- ½ tsp Mustard seed
- ½ tsp Coriander
Preparation steps

Peel the onions. Bring the vinegar, 250 ml (approximately 8 ounces) of water, the sugar, salt, and spices to a boil. Add the onions, and simmer gently for 3 minutes. Remove the onions from the cooking liquid and layer in clean, sterilized jars.

If you'd like, add a chili pepper to each jar. Bring rhe cooking liquid to a boil, and pour over the onions (making sure the onions are completely covered). Seal the jars immediately, and let the onions infuse for at least 1 week before serving.
