- 5 scallions
- 1 red chili pepper
- 1 large Lime
- 5 ozs unsalted roasted Shelled peanut
- 2 tsps cane sugar
- 2 Tbsps Thai fish sauce
- 1 Cucumber
- 3 Tbsps fried onion (prepared, from a package)

Preparation steps

Trim and rinse scallions. Trim chile pepper, cut in half lengthwise and remove seeds. Chop both finely and place in a bowl.

Cut the lime in half and squeeze juice. Measure 4 tablespoons juice and add to the bowl.

Crush peanuts coarsely in a blender. Stir into scallion-chile pepper mixture along with sugar and fish sauce.

Peel cucumber, rinse and pat dry. Cut into 8 equal-sized pieces.

Scoop out each piece with a melon baller leaving a thin layer of flesh intact. Fill cucumber cups with the peanut mixture, sprinkle with onion rings and serve.
