1 kilogram ripe Tomatoes (such as plum tomatoes)
1 red chili pepper
1 kilogram jam sugar (1:1 ratio)
1 organic lemon (juiced and zested)

Preparation steps

Blanch the tomatoes in boiling water. Remove the tomatoes from the water, peel, and cut into small pieces. Rinse the chili, remove the seeds, and finely dice. Add the tomato, chili, sugar, lemon juice, and lemon zest to a pot. Mix until combined, then let rest for 30 minutes.

Bring the mixture to a boil, reduce the heat, and simmer for 45 minutes. Pass through a fine strainer and return to a boil. Cook for 4 minutes, stirring constantly. Fill the prepared jars to the brim with the jam and seal tightly. Store in a cool, dark place.
