- 1 Pineapple (flesh diced)
- clear Apple juice (as required)
- 1 lemon (juiced)
- 1 tsp cloves
- 4 ½ cups sugar

Preparation steps
1.
Weigh the pineapple and top up with apple juice to make 36 ounce. Place in a pot with the lemon juice, cloves and sugar. Bring to the boil stirring continuously. Allow to bubble for around 4 minutes and then test that the jam has gelled enough.
2.
Transfer to prepared jars and close immediately. Leave to cool.
