- 1 tsp Mustard seed
- 1 bay leaf
- 1 shallot
- 1 tsp mild paprika
- 0.333 cup Cider vinegar
- ½ cup brown sugar
- 2 ⅔ cups Strawberries
- 4 mild chili peppers
- salt
- cayenne pepper
Preparation steps

Tie the coriander, mustard seeds and bay leaf in a muslin spice bag. Peel and finely dice the shallot. Put into a pan with the spice bag, paprika, about 50 ml water, the vinegar and sugar and bring to the boil. Simmer gently for about 5 minutes. Add a little more water if necessary.

Wash, hull and halve the strawberries. Wash the chillies, remove the stalks and cut into rings. Add the strawberries and chillies to the spiced liquid and simmer for about 10 minutes, stirring occasionally, until reduced and thickened. Remove the spice bag and leave the chutney to cool, then season to taste with salt and cayenne pepper.
