- 4 red Pepperoncini
- 2 garlic cloves
- 1 walnut-sized pieces ginger
- 4 Tbsps vegetable oil
- 1 tsp black peppercorns
- 1 Tbsp Cumin
- 1 tsp ground Cardamom
- per ¼ tsp allspice, cinnamon, and ground coriander
- 2 Tbsps sweet ground paprika
- 1 onion
- 4 Pork cutlets (each about 150 grams)
- salt
Preparation steps

For the marinade, rinse pepperoncinis and dice finely. Peel and chop garlic. Peel and dice ginger. Heat 2 tablespoons oil, stir in pepperoncinis, garlic, ginger, peppercorns, cumin seeds, cardamom, allspice, cinnamon, coriander and paprika and sauté briefly. Pour 250 ml (approximately 1 1/4 cup) water into marinade mixture and simmer gently for about 10 minutes. Puree marinade mixture and let cool.

Peel onion, chop finely and stir into marinade with remaining oil. Brush pork cutlets with marinade, cover and refrigerate for 2-3 horus.

Pat pork cutles dry and grill on a hot barbeque for 6-7 minutes on each side, brushing with marinade while grilling. Season pork cutlets with salt and serve.
