Preheat oven to 400 degrees F.
Heat oil in an ovenproof skillet over medium heat, cook pork chop for 2 minutes on each side until golden brown.. Transfer to oven and cook for eight minutes or until cooked to desired doneness.
In a small skillet over medium heat, add the butter and brown sugar, stir well to dissolve the sugar, add the apricot halves and walnuts, cut side down, and simmer for 6-8 minutes until caramelized.
Arrange the pork on a plate and spoon over apricots and walnuts. Garnish with fresh thyme. Serve.
