1 White roll (day-old)
1 onion
1 garlic clove
1 chili pepper (red)
5 thyme
600 grams Ground meat (meatloaf mix, or ground beef, pork and veal)
2 eggs
100 grams breadcrumbs
salt
peppers (freshly ground)
½ tsp ground paprika (sweet)
1 tsp Mustard (powder, medium-hot)
clarified butter (for frying)

Preparation steps

Soak the bread in room temperature water. Peel and finely chop the onion and garlic. Rinse and wipe dry the chile pepper, remove the seeds and finely chop. Rinse and shake dry the thyme sprigs and pluck the leaves from the stems.

Mix the ground meat with the onion, garlic, chile pepper and thyme. Using your hands, combine the eggs and breadcrumbs into the meat mixture. Season with salt, pepper, mustard powder, and paprika. Melt the clarified butter in a skillet and, with wet hands, form about 10-12 patties. Cook the patties in hot butter on both sides about 8-10 minutes until done (depending on thickness). Remove from heat. Serve immediately.
